Now that fall is coming, we need some savory, yet healthy meals to warm us up. Curry is one of those seasonings that many of us may not be used to cooking with, but it is great for dieters. Combined with apples, ginger, raisins, and lean protein from chicken, you have a great meal that’s low in fat, high in fiber, rich in nutrients, and full of flavor.

Actually a mix of spices, curry is loaded with potent antioxidants and compounds that can aid in weight loss by boosting metabolism and enhancing fat-burning. In fact, curcumin (found in turmeric, an essential ingredient in curry powder) has shown promise in not only limiting the growth of fat cells, but in actually stabilizing cell walls, thereby enhancing our resistance to disease and infection.

Apples are also one of the dieter’s best friends. They not only have numerous compounds which aid healthy weight loss, but are also low in calories and perfect for creating warm flavorful dishes that we can enjoy without any guilt.

Apples contain:

Antioxidants: Including quercetin, phloridzin, chlorogenic acid, and catechins.

Pectin: A type of soluble fiber which helps promote healthy cholesterol and blood sugar levels, improves feelings of fullness to help curb cravings, and encourages the growth of beneficial bacteria in the digestive tract.

Nutrients: vitamins C and K, potassium

Only about 80 calories for 1 medium apple (with peel).

Chicken Apple Curry
makes 4-6 servings

Ingredients:

  • 4 Cups cooked cubed chicken
  • 1 1/2 Cups diced apples (unpeeled)
  • 1/2 Cup raisins
  • 1/2 Cup celery (diced)
  • 1 Large onion (diced)
  • 1/4 Cup light olive oil (may use butter for more flavor)
  • 2 Tbs. flour
  • 1 1/2 Tbs. chicken bullion
  • 1 Tbs. curry powder
  • 1 Tbs. brown sugar
  • 1/2 tsp. garlic powder
  • 1/2 tsp. ground ginger (dried)
  • 1 Tbs. lemon juice
  • 1 1/2 Cups water
  • Diced spring onions (optional) for garnish
  • Directions:

  • Using small bowl, combine curry, sugar, garlic, ginger, and flour. Set aside.
  • Add bullion to water, and set aside so it dissolves.
  • Heat oil (or butter) in skillet and cook onions until transparent.
  • Add apples and raisins.
  • Saute for 5 minutes.
  • Add celery.
  • Saute for 2 more minutes.
  • Add dry ingredients to hot mixture, stirring until well-blended.
  • Add chicken bullion mixture and lemon juice. Stir until thickened.
  • Simmer for another 2-3 minutes, and keep stirring.
  • Add chicken and mix well.
  • Garnish with spring onions and serve over a bed of rice if desired.

    A lot of people don’t know that curry is good for them. In fact most of my friends think its a bad spice, I don’t know why.
