One of my favorite ways to lose weight or keeping the scale from creeping up again is to eat a variety of foods throughout the week. So here are a couple possibilities to get you started and away from the usual Burger or French Fries. The secret is to plan for larger amounts of these foods, cooking ahead of time for next day lunches and snacks.
Oh so Good Finger foods:
Chicken Shish Kabobs and what You Need:
- Bamboo Skewers (you get them in the Dollar store)
- Chicken breast cut in cubes (three big cubes per skewer)
- Veggies you like: red,green and yellow peppers cut in cubes
- Tomatoes cut in cubes
- Onions cut in cubes
- Zucchini cut in cubes
- Mushrooms cut in half (see whats on sale)
Season chicken kabobs by soaking them in balsamic vinegar for 10 minutes before putting on the charcoal grill. Another great way to add flavor is to sprinkle kabobs generously with paprika and a little sea salt. Fire on your charcoal grill and dry grill for about 30 minutes turning kabobs frequently. Cooking time varies depending on your grill.
Tip: Make enough kabobs for lunch the next day. The vegetables fill your stomach quickly and prevent you feeling hungry too soon.
Stuffed Green Pepper Recipe
- 6 green peppers (cut top, remove seeds)
- 1 pound ground chicken or turkey
- 1 can crushed tomatoes
- 1 medium onion chop
- 2 celery ribs, chop
- 2 garlic cloves, mince
- 1 tsp. oregano
- 1/2 tsp. rosemary, thyme, basil, and sage
- 1/8 pepper
- 1 1/2 cups cooked rice
- 1/3 cup shredded part skim mozzarella cheese
How to do it:
- Blanche peppers for3 minutes in boiling water. Drain and rinse in cold water, set aside. Brown chicken or turkey in skillet, remove and set aside.
- Add tomato-liquid, onion, celery, garlic and herbs. Cook until vegetables are tender and liquid thickens. Stir in tomatoes, chicken and rice. That’s your stuffing.
- Stuff peppers and place on baking pan. Don’t cover. Bake for 30 minutes (350F). Top peppers with a little cheese and bake another 3 minutes to melt.
Tip: Still delicious the next day.
Italian Wedding Soup Recipe
Yes you can make this delicious soup (somewhat) home made… It’s one of my favorite lunches to take to work.
What you need:
- 1 large onion, chop
- 1 tsp. dried Italian seasoning
- 1 pound ground beef for about 24 meat balls
- 1 egg
- 1/4 cup bread crumbs
- pepper
- 2 cans (14.5 oz. each) light chicken broth
- 1/2 cup small pasta shells
- 3 cups fresh baby spinach
- Parmesan cheese (freshly grated)
- In large bowl combine ground beef, egg, bread crumbs and pepper. Knead well. Make small meat balls. Heat a little olive oil and add meat balls to skillet and brown. Set aside.
- In pot heat 1 tsp. olive oil. Add onion, Italian seasoning, 1/2 tsp sea salt. Stir until onions are tender (2-3 minutes).
- Add meat balls, cook for another 2-3 minutes. Add broth and two cups of water, and bring to a boil.
- Add pasta, and cook for about 10 minutes until tender. Stir in spinach and cook another 1-2 minutes.
- Top with Parmesan cheese (optional).
