Yogurt is more than just a snack to ease a Boston cream pie craving. It’s also a versatile and essential staple in the dieter’s kitchen. Here’s a few easy uses for yogurt to add to a balanced, low-fat diet:
Yogurt-Topped Baked Potatoes:
Try a 2% fat, plain, Greek-style yogurt, which is very creamy and not as sour as other plain yogurts. It also has a much higher protein content than other varieties of yogurt. Top with a sprinkle of chives, dill, fresh basil, or other herbs.
Tangy Tarragon Yogurt Dressing:
- 1 cup plain low-fat or non-fat yogurt
- 2 Tbs. tarragon white wine vinegar
- 2 Tbs. finely sliced scallions
- 1/2 teaspoon dried leaf tarragon
- 1/2 teaspoon ground black pepper (more or less to taste)
- 1/8 teaspoon salt
Simply mix all ingredients together in a bowl, or toss in blender, and refrigerate.
Creamy Mustard and Yogurt Dressing
- 1 cup non-fat or low-fat plain yogurt
- 1 Tbs. of mustard (any kind you prefer)
- 1 garlic clove, minced and/or 2 tsp. minced onion
- 2 Tbs. lemon juice
- 1 Tbs. apple juice concentrate
In blender or food processor, combine yogurt, mustard, garlic, and onion until smooth. Add lemon juice and apple concentrate, and blend. (Vegetarian Times Issue: April 1, 1998 p.28)
Easy Frozen Yogurt and Fruit Dessert:
- 1 cup of low-fat yogurt (strawberry or vanilla)
- 2 cups of unsweetened frozen strawberries, thawed
- 1 banana, mashed
- 1/4 cup pistachios, well-chopped
Put thawed strawberries in blender or food processor and puree until smooth. Put strawberries, banana, and yogurt in a large bowl and mix well. Stir in pistachios. Spoon mixture into paper-lined muffin pans and freeze until firm. Before serving, allow to soften for 10 minutes after removing from freezer.
Honey Almond Dip (great for fruit slices or cinnamon pita chips)
- 1 cup low-fat or fat-free vanilla yogurt
- 1/3 cup chopped almonds (may also try 2-3 Tbs. almond butter, and may omit honey)
- 1 teaspoon honey
- 1 dash of almond extract
Just mix all ingredients together in a bowl, and allow to chill for one hour (to blend flavors) before serving with fresh slices of apple, strawberries, or peaches.
Chive, Cilantro, and Yogurt Dip (great for veggies or pitas)
- 1 cup low-fat, non-fat yogurt
- 2 Tbs. fresh, finely chopped chives
- 1 Tbs. fresh, finely chopped cilantro
- Salt and Pepper to taste
Mix all ingredients together in a bowl, and allow to chill for one hour, for flavors to blend before serving.
