Diced Chicken Breasts with Zucchini

Her name is Buttercup and she only weighs five pounds. No fat problem here. For us, who desire to lose some weight the healthy way, here is another delicious Chinese recipe.

Chinese Wok Cooking Recipe:

Chicken Breasts with Zucchini

  • 1 cup diced chicken
  • 1 clove diced garlic
  • 2 Tbs light soy sauce
  • !/2 cup bamboo shoots sliced matchstick size
  • 1/4 cup canned mushroom slices
  • 2 cups diced Zucchini
  • 1Tbs cornstarch in 1/4 cup water
  • Roasted slivered almonds

Stirfry chicken over high heat with garlic in oil. When it turns white, add 2 tablespoons soy, and continue stirring for several minutes.

You may substitute the zucchini with asparagus or celery.

snack: yogurt and / or fresh fruit
