Most naturally-produced fatty acids (created or transformed in animalia or plant cells with an even number of carbon in chains) are in cis-configuration where they are more easily transformable. The trans-configuration results in much more stable chains that are very difficult to further break or transform, forming longer chains that aggregate in tissues and lacking the necessary hydrophilic properties.

Very informative post. Americans need to get more healthy fats into our diets. We eat many saturated fats, trans fats, and omega-6 polyunsaturated fats. We need to adopt a more Mediterranean type diet, which are high in omega-3 polyunsaturated fats and monounsaturated fats.

[...] Patients without CHD (Coronary Heart Disease): Fatty fish at least twice a week, also include oils and foods rich in ALA. ALA is a plant-based source of omega-3 because the body can convert it to both EPA and DHA, however, the body is not very effecient with this conversion.
