Healthy Reduced-Calorie Snack Recipes

Here are a few of my favorite reduced calorie recipes for a healthy diet. For an energy boost I choose fruit, especially apples and berries for breakfast and snacks. The apple oat crisp has only 175 calories per serving and satisfies my appetite and gives me that warm, fuzzy, non-diety, but oh so good for me feeling. Strawberries are plentiful right now and very affordable. What can you do with them? Add your ideas in the comment box… here’s the recipes…

Low Fat Yogurt Parfait:

  • 1 cup all natural low or no fat yogurt (without high fructose corn syrup !)
  • 1/2 cup wild frozen blueberries (even better: fresh blueberries )
  • 2 Tbs. flax seeds

    Variation:

  • add strawberries or raspberries
  • add granola and flax seed to the yogurt

Apple Oat Crisp

  • 1 lemon
  • 3 lbs. Granny Smith and / or Golden Delicious
    apples, peeled, cored, and cut into 1in wedges
  • 1/3 c. plus 1/4 c. packed light brown sugar
  • 2Tbs. plus 1/3 c. all-purpose flour
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1 c. old fashioned oats, uncooked
  • 4Tbsp. butter or margarine, softened

What to do:

  • preheat oven to 425F
  • grate 1/2 tsp lemon zest (wash peel good)
  • 2 Tbs. fresh lemon juice
  • Take a 13in x 9in glass dish and toss lemon zest with apple wedges, 1/3 cup of brown sugar, 2 Tbs. flour, ground cinnamon, and salt until apples are coated.

    In medium bowl, mix oats with remaining 1/4 cup sugar and 1/3 cup flour. Blend in butter until mixture form coarse crumbs. Sprinkle crumb clumps over apple mixture.

    Bake for 30 to 40 minutes or until apples are tender and topping is lightly browned. Cool crisp n wire rack for 10 minutes to serve warm – or let cool completely and serve later.

    Each 1/2 cup serving: about 175 calories, 2 g protein, 33g carbohydrate, 5 g total fat, 145 mg sodium – (Source: Good Housekeeping Feb.2008)

    These are good recipes and good healthy eating choices. I have going to my nutritionist lately and she has informed me to eat like this. Very good ideas!
