Fresh fruit are undoubtedly the healthiest snacks to opt for. Although oranges are in season all year, we think of them especially when the days grow shorter. Yes, it’s vitamin C time again. And as the holidays are approaching we are preparing for all the wonderful things to do. To help you out here are couple of recipes for oranges I found in Oprah’s magazine. I call them Christmas Dessert Recipes:
Orange Dessert
- 7 blood oranges
- 7 small navel oranges
- 1 lime
- 2 Tbsp. powdered gelatin
- 1/2 cup fresh orange juice (from 1 large orange strained)
- 3Tbsp. sugar
- 2 cups prosecco
- mint sprigs
- Wash and peel lime and oranges
- Segment all fruit
- Chop lime segments to small pieces- set aside
- In saucepan, add gelatin to 2 Tbsp. of water
- Soften gelatin for 2 min. then, over low heat, stir to dissolve
- Add sugar to orange juice then, over med. high heat, stir to dissolve – remove from burner
- To orange juice mixture add gelatin mixture and mix in prosecco (use wire whisk)
- Find a 10″x31/4 mold (or medium glass bowl)
- First Layer: orange sections – alternating colors
- Sprinkle lime pieces over it and cover with just enough gelatin mixture
- Keep on layering orange, lime and gelatin, filling the bowl – cover
- Refrigerate for a minimum of 8 hours
- Immerse bottom of bowl (or mold) in hot water. Turn over onto serving dish
- Garnish with mint sprigs
Orange Chocolate Mousse Dessert
- 5 oz. bittersweet chocolate
- 2 Tbsp. coffee or water
- 2 Tbsp. Grand Marnier
- 4 fresh large eggs (organic)
- 1 cup heavy cream chilled
- Orange sections
- Mint sprigs
- Use double boiler
- Mix chocolate, Grand Marnier, and coffee or water together
- Stir over slow heat until chocolate is melted
- Remove from heat
- Separate eggs and whisk egg yolks to cooled chocolate mixture
- In a bowl and whip heavy cream
- In another bowl and beat egg whites until foamy and stir in sugar
- Fold half the egg whites into chocolate mixture
- Then add the rest of the egg whites to it
- Fold in whipped cream
- Spoon into 6 glasses and cool for at least 4 hours
- Garnish with orange slices and mint
Note: This recipe includes raw eggs. Raw eggs can be of danger for the elderly, infants, and people with a compromised immune system.

I believe, healthy nutrition involves not just numbers, but common sense. All the ingredients listed here are healthy. Yes, and we should read the labels before purchasing. Now, once again, we’re in the middle of the holiday season. When for some food seems to flow in abundance . Even with little, we are cooking and baking more then any other times a year and are more tempted by the culinary delights of others. All what’s left then is common sense. Eat a little bit of the healthy foods you like and just enough so to ease your appetite with. Your brain and body will thank you for it.
